Cashew Feni Making Process
Harvesting
The process begins with the harvesting only tree ripened cashew apples from the trees, which takes place during the dry season from February to May. The cashew apples are handpicked, ensuring only the ripest and best-quality fruit is selected.
Juicing
Once harvested, the cashew apples are washed and crushed to extract the juice. Traditionally, this was done using a hand-operated wooden press called a
"Canek" or by stomping on the fruit in a stone trough known as a "Colmbi".
Fermentation
The juice is collected in large earthenware called "kodem" or "bhatti". It is left to ferment naturally, for 3-4 days. During fermentation, natural yeast present on the skin of the cashew apples converts the sugars in the juice into alcohol, creating a low-proof alcoholic beverage known as "neero".
Distillation
After fermentation, neero is distilled using a copper pot which is heated to the point that it evaporates and the alcohol vapours are collected and condensed into liquid form in an adjacent pot that is cooled down. The first distillation produces "urrak," which is then distilled again to create Cashew Feni.
Ageing
The distilled Cashew Feni is aged in earthenware pots to enhance its flavour and aroma. This aging process can vary in duration, ranging from a few months to several years, depending on the desired characteristics of the final product.
Bottling
Once aged to perfection, the Cashew Feni is filtered and bottled, ready to be enjoyed by connoisseurs both locally and internationally.

The back story
As we trace the origins of Cashew Feni, we first see the Portuguese explorers captivated by the exotic allure of cashews in South America, bringing these precious fruits to the shores of India and Goa centuries ago. And the skilful hands of local Goan artisans, carefully transformed these cashew apples into the revered elixir known as Feni, using techniques passed down through generations.
The Goan Cashew Feni received Geographical Indication (GI) recognition in 2006, a mark that ensures authenticity and the true essence of Goa. This prestigious designation honours the traditional production methods and unique terroir of the region, safeguarding the rich heritage of Cashew Feni for connoisseurs worldwide.
